2015 Josephine Sauvignon Blanc
Crafted intentionally, starting with a light press of whole cluster fruit and cold fermentation in small stainless steel tanks to preserve freshness and fruit aromatics. We age the Sauvignon Blanc in seasoned French Oak and Acacia barrels, and a small stainless steel tank. The wine is elevated on the lees for four months, with weekly battonage. This refreshing wine shows delicate aromas with a soft entry and crisp acidity adding structure; and stunning fruit filling out the finish.
