Intentionally bottled with its natural sediment. Before opening, gently invert the bottle to reincorporate the sediment, then serve slightly chilled.
Tasting Notes
Tropical aromatics and sun-warmed peaches rise from the glass, edged by an essence of flint-y wet granite and the briny freshness of sea spray, reminiscent of something beautifully untamed. The balance of flavor density with quenching freshness brings a captivating tension, as beautifully ripened apricots, stone fruits, and a touch of brioche dance along the palate. This nervous energy and angularity give the wine a youthful verve, while nine months in a single, wonderfully seasoned 500-liter French oak puncheon lends texture and dimension without diminishing its precision. Regal, distinctive, and transportive, it calls to mind oysters by the sea, cool salt air, and the wild elegance of the coast.
